The Freeze-Ahead Method
The Freeze-Ahead Method
Thirty people. Children everywhere. The house the way it only gets at Christmas — full in every direction. And my mother was already sitting in her chair. Settled. Arms open. Not behind. Not still in the kitchen. Ready. I spent years trying to understand how she did it. I tried and fell short more times than I want to count. I planned menus I couldn't finish. I committed to lists I abandoned. I started in December and ran out of time the way you always run out of time in December — because December adds things. It always does. One more name on the gift list. One more dozen cookies someone asked for. One more neighbor you forgot until you saw her car in the driveway. The system I built is the answer to all of that accumulation. Not a perfect December — a prepared one. You do the work in October and November, in the quiet months when the calendar still has room. You tuck a labeled freezer bag away in July. And when Christmas arrives, it arrives to a kitchen that was ready for it. This page is the method. Choose your recipes early. Prepare them ahead. Store them right. Serve them when the people you love walk through the door. That is how you get to be in the chair.
